There's so many amazing small-batch coffee roasters in every city it's hard to keep track, let alone taste coffee from each to decide on a favorite. We totally understand, it's a lot for us and try to do just that. Ruby Coffee Roasters – Nelsonville, WI

Ruby is based in rural Central Wisconsin in a small town called Nelsonville (population 200) - choosing to be there because of the access to outdoors and recreation, amazing community, wealth of amazing food, farmers, and craft breweries, and generally inspiring culture.

Their approach to sourcing is based on quality, sustainability, transparency, passion and collaboration.  Working together with coffee producers, exporters, and importer partners to achieve responsible sourcing with an eye to the future.

Blueprint Coffee – Saint Louis, MO

Blueprint is a coffee bar and specialty roaster located in Saint Louis, MO. Blueprint Coffee seeks a mutually beneficial relationship loop among our producers, vendors, wholesale partners, and customers. Good coffee must be good from the start, so we dedicate a tremendous amount of time selecting a few coffees that are fresh and exciting. The beauty in these coffees is maintained through precise roasting, brewing, and training methods. Our company was born because a handful of baristas knew there was a need for a more transparent way to serve and present coffee. We encourage you to stop by for a cup and join in the loop.

El Capitan Latin American Blend - Bluebeard Coffee Roasters - Sixth Wave

Bluebeard Coffee Roasters – Tacoma, WA

Opened in April 2011, Bluebeard Coffee Roasters is a 253rd wave coffee company delivering a world-class suite of coffees to an expanding market of coffee lovers in and around beautiful Tacoma, WA.

They consider their roasting style to be the Perfect Medium. Deep enough to develop sweetness and depth, light enough to leave the subtleties -- berry, citrus, spice, floral characteristics, etc. -- intact. A fine balance of heat, gas pressure, air flow, time and judgement.

They buy neat coffees and roast them well on a beautific 12-kilo Probat. They extract them precisely and look to find and teach others to do the same.

City of Saints – Brooklyn, NY

City of Saints is a coffee roasting company with shops in wonderfully disparate nooks of New York and New Jersey, taking a tremendous amount of pride in their coffee. What most excites them is their ongoing goal of creating cafes and coffee partnerships that celebrate the communities they inhabit.

Currently occupying a residential corner in Hoboken, a light-soaked bar in the East Village, and a cavernous industrial hideaway in Bushwick, they value inclusiveness over imposition, open-mindedness over repetition, light-heartedness over reverence.
